Create a Label in Six Steps

Size and Shape, and What Each Shape Costs You
Shape is the decision with the biggest gap between what it looks like in a mockup and what it costs on an invoice. A rectangle and a circle come off a standard cutting tool. Anything else needs a die.

The catch column is where jobs actually go wrong. Cut tolerance on a die is small, but it is not zero, so a 2 mm border that follows the outline exactly will read as off-center on some pieces in the run. Either make the border thick enough that a fraction of drift disappears into it, or leave the border off and let the artwork run to the edge. Choose the Material by What the Container Survives
Face stock is where price and disappointment meet. The screen shows you a color; it does not show you what happens after twenty minutes in a cooler.

Two habits save most of the trouble. Build a File That Cuts Where You Expect
Three numbers cover almost every label file. Bleed is 0.125 inch past the cut. The safe margin is 0.125 inch inside it. Images sit at 300 ppi at final size, not at the size they came off a phone.
Build the artboard at the finished label size, then extend every background, photograph and color block 0.125 inch beyond each edge. That overhang is what the blade eats, and without it a fraction of drift leaves a white sliver along one side. Pull all type, logos, barcodes and legal copy 0.125 inch inside the cut, and give a barcode more room than that since scanners need quiet zones on both ends.
Set the document to CMYK before you start rather than converting at the end, because a color picked in RGB can shift noticeably on conversion and bright oranges and blues shift the most. Convert fonts to outlines or package the file with the fonts included. If a specific brand color has to match across products, specify a spot color instead of hoping a CMYK build repeats, and read choosing the right file type for printing before exporting.
For a custom shape, the die line is a separate closed path on its own named layer, drawn as a single continuous vector with no strokes left unexpanded. Never draw it as a dashed guide inside the artwork, and never leave two overlapping paths where you meant one. Roll or Sheet, and How Many to Order
Sheets suit hand application and small numbers. A sheet sits flat on a table, you peel what you need, and reordering is easy. Rolls suit repeat production, because a label applicator needs a roll with a consistent gap and a known core size, and hand-peeling a thousand labels off a roll is slower than off sheets.
The cost curve is the part people underestimate. Setup, plates and any cutting die are paid once, so the second thousand labels is dramatically cheaper per piece than the first thousand. What size should I make my label?
Measure the container and subtract, never guess from the artwork. Do I have to supply a die line, and how do I make one?

Paper or vinyl for a jar that lives in a fridge?
Vinyl or another waterproof face, every time. Paper label stock absorbs condensation, the edges lift first, then the ink wicks and the whole face goes soft.
