What cardstock weight is recommended for saddle-stitch bound booklets?

For saddle-stitch booklets, a lighter uncoated text stock is generally used for the inside pages with a heavier cover stock on the outside. Stock that is too thick is hard to fold and turn at the spine, so the combination matters.
