I am looking to select 1/0, black ink for my envelopes. Does that mean I can print grayscale or solid black only?

Yes of course!. Grayscale is a range of monochromatic shades from black to white. Your artwork can have any screen or percentage of black you want so you can print any range of grayscale, or greyscale as the British tend to spell it.
